Oooo…this pasta dish is so good.  The cream cheese, seasonings and diced tomatoes provide a nice change from your typical red sauce pasta dish.  The cream cheese gives it added creaminess, and the seasonings and tomatoes depth of flavor.  This is a must try.

Italian Pasta Bake
2 C penne pasta
1 T butter
2 chicken breasts, diced
1 – 14oz can diced tomatoes
1 – 15 oz jar pasta sauce
9 oz fresh spinach
1 t basil
2 t Italian Seasoning
2 oz cream cheese
1 C mozzarella
Cook pasta according to package directions.  With one minute left, add spinach to boiling water.  Drain and set aside.  Melt butter in saucepan.  Cook diced chicken.  Add seasoning, pasta sauce, tomatoes and cream cheese.  Simmer until heated throughout.  Stir in 1/2 C mozzarella and pasta noodles/spinach.  Pour into 2 qt casserole dish and sprinkle with remaining 1/2 C mozzarella.  Bake at 375 for 20-25 minutes.
