This is a really good breakfast recipe. I mean, who doesn’t want cake for breakfast? I found this recipe online and tweaked it a bit. Here are the ingredients:
3C quick oats
3/4 C brown sugar (I only did 1/2 C. You could also use 1/2 C honey or maple syrup)
1 t baking powder
1 t cinnamon
1 t salt
1 C milk
1/2 C oil (I used applesauce)
Mix oats, brown sugar, baking powder, salt and cinnamon in mixing bowl. In small bowl, whisk oil, milk, eggs. Add wet ingredients to dry ingredients. Bake in a greased 9×9 pan on 350 for 20-25 minutes. Top with your favorite fruit and drizzle with pure maple syrup.
Add 3/4 C fruit to the batter and bake. You could also add 3/4 C sweet potato or pumpkin.
